Congratulations...finally!!!!! A little Everyone talks about receiving email notification along the way. I have not received one email since I started this process. And yes, I did write it correctly on the paperwork. I didn't even receive a response to an email that I sent to GUZ informing them of my SO's new address. Hi Joanne, I think you did great! The REAL art of cookery is making do with the ingredients that you have on hand. I'll bet it really was very good. You can always tell if the person you have cooked for is sincere in their praise by how much they eat! I was going to recommend DiCarlo Extra Sour sourdough bread. Can you get that in PA? San Luis sourdough is my favorite, and they have a San Luis style in Vons made by the same bakers. -James

Hi again, Do you replace the seed for storage of the left over avocado? Also, to prevent oxidation you can cover the leftover avocado TIGHTLY with a plastic film. Place the film firmly in contact with any leftover avocado to COMPLETELY exclude all air. Have you ever cooked with Avocado oil? it is good for salads and other uses. I have an enormous Avocado tree in my back yard and I just had it topped and trimmed. I told the tree service to save all the avocados. I gave away 9 large boxes (size that a ream of copier paper comes in) at my job. I live fairly close to Carpinteria, Califorina which is the site of the Avocado festival with the "world's largest bowl of guacamole". -James

Hi Joanne, I think it's only a shame if you never try Richard's recipe! It sounds WONDERFUL, but will be much more work for a working mother! My ex-wife (God rest her soul) helped me with this chowder once. She was NOT an experienced cook, since her mother was a GREAT cook! Anyways, she asked me to learn this and I reverse-engineered this from a seafood restaurant in Long Beach CA. One night, I had to go to the store in the middle, so I showed her how stir in the thickener balls and told her to use a colander to work out any lumps if she didn't stir well enough. When I returned, she was so proud! She said "Look, no lumps". I looked and stirred and said, "yes! where are the potatoes?" She had stirred in the thickener THEN she noticed the chunks of potatoes and then put the WHOLE SOUP through the colander MANY times. Not much left of the celery either! still tasted good though! The Wondra flour is a GREAT way to make American gravies (called kettle gravies) too. -James

Simpler Clam Chowder (canned clams allowed) 1 cup chopped celery 1 large brown onion, chopped 1/2 tablespoon celery seed 1 can (16 ozs) baby clams 2 cups whole milk 3 large russet potatoes, peeled and chopped into small chunks REAL butter Wondra Flour (for the roux) 4 pieces bacon cook the bacon until fat comes off, remove and pat with paper towels, reserve for later. saute the celery and onion in the bacon fat ( add some butter if you don't have enough fat) until the onions are golden. Add the celery seed and saute 30 seconds to one minute more maximum. Pour in the can of clams including the broth. Add the potatoes and just enough water to cover the potatoes (if needed). Simmer covered until the potatoes start to become tender. Take some of the Wondra flour (it is already sieved, great for cooking and saving time) and mix with softened butter in a bowl. Make little balls of this mix, no larger than 1/2 inch each. Make sure the butter completely permeates the flour, this will prevent the chowder from developing lumps. add the whole milk and bring to a simmer. DO NOT boil. add in the flour/butter balls to thicken stirring CONSTANTLY. when it is thick simmer for 10 minutes more (to insure the flour is cooked) and it is done! Crumble the bacon and sprinkle on the top of the bowls when served. All of Richards spices will help (especially the bayleaf) but this can be made on short notice anyplace, and anytime of year. I serve real sourdough toast and butter with this. -James

If my memory serves me correctly...the only day there is no smog in LA is during the Rose Bowl Parade...hehe 191545[/snapback] Hi, In SoCal at least, we never trust air that we can't see! What's it up to, hiding like that? Anybody that has been to any industrial city in China recently will NOT be impressed by the smog here anyways. The inversion layer has been in place over the LA basin for a LONG time. The chumash name for this area translates as 'the valley of the little smokes'. Anyways I live below the 'Orange Curtain', not as intense over here. -James
