They require the most recent 3 years income tax return.

The offical USCIS policy for the I-864 is to supply 1 years tax returns as of early this year, now GZ may request 3 years and it doesn't matter if they are correct or not since they are the people you must make happy to get the visa.

 

You could try supplying 1 year with it, but make sure your SO has the other 2 years available if needed, the only place I could find on the GZ web site that mentions the 1 year requirement for the I-864 is in the Adoption section.

As yuliki has already stated, the directions on the I-864 say to provide the most recent three years tax returns. Better to be prepared and have too much than not enough. Good luck!
