If K-3 visa expired...

I'm not speaking from experience, but I don't think the K-3 is renewable. Like you, we filed for AOS but off a K-1 which is now expired. Technically, my wife's status is considered a "period of stay authorized by the Attorney General". This means that she is here legally but in a kind of limbo while we wait for Atlanta to get its act together. From what I've been told, nothing can or needs to be done other than wait.

You can apply for a K-3 visa extension by filing an I -539 but it isn't necessary unless you all plan to travel out of country. Since you have filed the I-485 with CIS, your spouse is now in the 'pending' status. I forget the actual terminology but I have posted this situation here a few times before.
