Randy W Posted November 30, 2017 Report Share Posted November 30, 2017 (edited) My wife and I will often go for a walk through the 龟头岭 (Guitouling or TURTLE Ridge) Park before eating at one of our favorite chicken shacks. This last weekend was a LITTLE on the cold side here in Yulin, so there weren't very many people. In Yulin, "cold" tends to mean anything below 70°F (about 19°C). The last time that I was in Beijing the mother n law use to buy ducks for me prepared something like that and they were fantastic. I just keep a pocket knife in my "purse", as Jiaying calls my man bag/camera bag. Just my camera and my cell phone (I like to carry BOTH at all times) are too big for my pockets. Cargo shorts/pants? A little circle-jerked, but, yes, very good. Usually, they will slice it Chinese style to about 1/4" thickness, slicing through the bone with a single whack from a cleaver. This makes for a better presentation, but I like it better like this, since the cleavers are usually fairly dull and produce many bone fragments.
