Hong Kong visit with wife

I did search around to see if this topic had been addressed, but didn't find anything.

My wife and I would like to go and visit HK with my extended family. I am a US Citizen so I'm able to get in for a short vacation with no issues. She still has her Chinese passport and is a US Permanent Residence holder. After researching a bunch it seems she does need a "HK Visitor's Pass" something that she mentioned that people needed if they were in the mainland and wanted to visit HK. Question is, hand anyone pulled this off from the US since that is where we currently are?

Good thing is that we are going back to China this winter and she can probably process it from there, but as a contingency plan I wonder if the Chinese Embassy's in the US can process these visitors passes for HK.

2. Travellers who plan to stay in Hong Kong for more than 7 days must apply for an entry permit. The Chinese Embassy or Consulates General will issue a single-entry or double-entry permit valid for 3 months with a maximum duration of stay of 30 days each time. U.S. permanent resident card holders who have lived overseas for at least one year can apply for a multiple-entry permit valid for 2 years.
