Thanks for the replies...Jie considered the Pacair but had heard from some other Chinese ladies who seemed to like the Zephyr Typhoon model...but from all I've read, those are a really a pain in the ass to install. Compared to most other brands we've looked at it looks like the Pacairs pump more wind for the price

I got a black and gold Pacair just like Andrew but I am NOT happy with it because I have no walls around my stove top and it does NOT pull in all the steam and etc. Maybe with a back wall it works great, but half the smoke goes past the front of the hood, even with both fans on full blast. There are hood with higher CFMs and wish I had gone that direction. But this is just my house and I think no walls make for some strange wind currents when cooking. It IS much stronger than the old hood I had for sure.

A simple test for your existing fan - move something (smoking or steaming) around to see the limits of where the air is being sucked in. Ours will pull in air horizontally from a couple of feet away.

 

Jiaying mainly boils food, though - I'm the only greaser in the family. Our stove is too hot (it'll burn butter even on the lowest setting) so I mainly use oil and even hold the pan away from the flame for awhile, or turn it off temporarily to try to control the temperature. Food at restaurants I find is often served too hot to eat, and is still plenty hot throughout the meal.

 

Something else to think about, at least here in China, is where the air comes from. Our fan came with a warning that if there's not enough air intake available, the fan will simply recirculate some of the air (if there's not enough to draw on). American homes may have more breathability.

 

With the modern weather stripping used in homes, I can turn on the fan, and with all other windows closed, open the window in the back bathroom and feel the breeze being sucked in.
