They kept my our wedding certificate, my wife's police report and birth certificate. Will these be sent back to us with the visa?

Before leaving China get another birth cert for future uses in the states, the police cert USCIS will keep, and has no future uses anyway.

 

If you have a photo copy of marriage cert, you may be able to swap it at the POE for the original, when the POE officer opens the immigrations envelope to inspect contents. It will not be outside the envelope, and you cannot open that envelope to retrieve it.

Thanks for the advice. If we didn't copy our wedding certificate, when we get to the states, what proof of marriage do we have?

Along with birth cert get another certified copy of marriage cert at the notary office, you should have the red book. You should have given a certified copy to the consulate or even an ordinary photo copy, and brought originals into the interview so they could confirm that the photo copies are true copies
