Unfortunately it has taken me far longer to put the package together than I initially thought it would. She signed and dated the 325a nearly a month ago. Does anyone think that would be a problem?

You mean I-864 affidavit of support, one month will not matter for that form either.

 

Note I-865 is for reporting to USCIS a sponsor's change of address.
