When would my SO be able to change her name.. She wants to change her first and last name legally. Her current status is K3 visa about to do AOS.

Best to file I-485 using married name, there is a line on I-485 "name on I-94" and G-325A "other name used" for maiden name.

 

If you wait until after getting green card, you will file an I-90 and pay $300+
