I understand that when an adult applies for citizenship, they can change their name. What about a child you becomes naturalized by the N-600. Is there any such opportunity for the child to do so.

Changing what name? Given of family? If family US Citizen "Step" parent should adopt the child and through adoption child can change name, also adoption is a shortcut to citizenship and can be done before the child's parent naturalizes, it can be done before removal of conditions on a conditional green card. Lee Fisher did that.
