Auricularia auricula-judae

I like it the way my lao po's parents prepare it. She gave me some dried to bring home, but I can't figure out how to cook it properly. It ends up too rubbery and tasteless.

 

My wife soaked it in water for quite a while, so it became softer and larger. Then she cooked it (fry) with pork, soy source and other ingredients. It supposed to be rich in iron and have other beneficial effects.

that is the way we normally eat it.. soak a lot time then cook with pork... I like it.
