CR1 Granted... Can we 'visit' the US?

My wife's CR1 visa has (finally) been granted! Only took 17 months

 

The thing is that we want to travel around Asia for several months before moving permanently to the US. Unfortunately, this would put us in the US after the 6 month entry window on her visa expires.

 

Can we both go to the USA now on her CR1, stay for a couple of weeks, and then both leave the US and travel around for 7 months or so?

P.S. During our travels, we will probably spend 1-2 months in China.
