I am over the poverty guidelines.....Is it "more ammunition" at interview to include supporting evidence of assets(?) such as copies of titles and appraisels of personal property (vehicles,vessels,tools and equipment)?

There is no need to include assets if you qualify based on income. Don't give the VO a reason to review unnecessary information.
