How easy is it to renew your passport while traveling or living in China? I might not run into this problem, but I want to make sure I cover everything just in case.. Should I carry a original birth cert?

Pretty certain they can (maybe with the exception of Wuhan). You can always check yourself though by using the consulate links on the embassy or consulate website.
