Thank you ! Do they need to be notarized ?

Nope, a simple photocopy is sufficient.

I've been living here in Wuhan, China with my wife whom is a Chinese national. We do not have joint accounts or own any property here. Will this be a problem? We have our names on rental agreements, but I am not sure if that s enough. I want to file the I-130 form to start the process of getting my wife a green card. Could anyone tell me the documents I would need to bring while filing the I-130?

Photo copy of a joint rental agreement, and a couple affidavits from friends and/or family is fine.

They understand living in China tends to not generate much of the other evidence.

When did you marry? If last year did you file a joint return?
